CoW Protocol settles trades in batch auctions through a network of competing solvers, which protects users from MEV (front-running and sandwich attacks) and can find coincidences of wants between traders for better prices.
Trades are non-custodial and gasless to sign — you authorise an order and solvers execute it on-chain. The trade-off is that settlement is a short batch wait rather than instant.
